Summer Shrimp & Avocado Salad

If your summer consists of a lot of BBQs and salads, have I got a gorgeous salad for you. This will be my new staple and it's so tasty, bright, and satisfying that I could eat it everyday.
I just love how easy it is to make tasty salad dressings so quickly with doTERRA essential oils. This salad uses cilantro, black pepper, and lime oils to create a really yummy dressing. Shrimp brings in some light protein that grills quickly and adds a nice charcoal taste.
Ingredients
▢ 1/4 cup chopped red onion
▢ 2 limes juiced
▢ 1 tsp olive oil
▢ 4 drops lime oil + 2 drops cilantro + 2 drops black pepper oil
▢ 1/4 tsp sea salt to taste
▢ 1 lb jumbo cooked, peeled shrimp, chopped*
▢ 1 medium tomato, diced
▢ 1 medium hass avocado, diced (about 5 oz)
▢ 1 jalapeno, seeds removed, diced fine (optional)
▢ 1 cup shredded spinach
▢ 1/2 yellow pepper diced
▢ 1 tbsp chopped cilantro
For grilling the shrimp
▢ 2 tbsp olive oil
▢ 4 drops lime oil + 2 drops black pepper + 2 drops cumin
▢ 1 tsp dried oregano
▢ 1/4 tsp sea salt to taste
Instructions
In a small bowl, combine ingredients to grill the shrimp. Toss the shrimp in the mixture and add shrimp to a hot pan or grill. Cook several minutes each side until pink but still plump. Remove from heat.
In a small bowl combine red onion, lime juice, olive oil, salt, and oils. Let them marinate at least 5 minutes to mellow the flavor of the onion.
In a large bowl combine chopped shrimp, avocado, tomato, yellow pepper, and optional jalapeño on a bed of spinach.
Combine all the ingredients together and top with cilantro. Makes 4 servings.
On a hot day, I love to pair this with a watermelon-basil refresher.
Watermelon-Basil Refresher Mocktail

I make some ice cubes with lime or basil or blackberries. They add flavor and color and fun to your summer cocktails. I've also added essential oils when you have a particular drink or common flavors in mind.
In a blender, add 4 cups cubed watermelon and blitz. With a large strainer, strain the watermelon - I like leaving a bit of the fruit. Add juice to a pitcher. If you're making this more often or for a larger group, make this basil simple syrup and store in a glass jar / container. You can use it up or store extra in the fridge and use within the month.
Basil Simple Syrup
Add 4 cups water warmed water and 1 cup sugar to a sauce pan. Add 4 drops basil oil to cooled mixture and add to jar.
In your shaker, add a cup of watermelon juice tasting to gauge the sweetness. Add up to 1 oz of basil simple syrup. If adding simple syrup, do not add additional oil. If not adding simple syrup, add 1 drop basil oil. Add 1 cup cracked ice and shake.
Serve over fresh ice with basil and lime slice garnish.
